My son lives in an apartment with a small stove/oven and needed something like mine for baking meatballs to cookies. Other pans just didn't work for him. My 12 x 18 jelly roll pans were purchased in 1969 and well seasoned now...they are as dark as they can get and bake my breads and cookies to perfection. I can't do without them!

  • customer review: Since learning how bad Teflon is, I decided that I wanted to get rid of our cookie sheets and buy new ones. But I couldn't figure out what kind to get. I wanted stonewear sheets, but they are expensive and get mixed reviews (lots of sticking). So I went with these instead and I am really glad that I did. They work beautifully, though I do grease them first, unlike Teflon coated sheets. Everything bakes beautifully and comes off easily, they are simple to clean up and very inexpensive. I highly recommend them!

  • customer review: This was not the heaviest or the the best made stainless steel baking sheet I have ever used, but it is better than most of the other baking sheets out on the market. It hasn't warped yet from the heat of the oven and the glue that was stuck on it came off after rubbing it with vegetable oil. That said, these sheets have folded down edges that could still catch on stuff or even cut someone if they're handled wrong. This is probably due to the thinness of the metal, heavier sheets that I once had had the edges folded up and smoothed off.

  • customer review: I bake semi-professionally, making at least three batches of cookies a week on these sheets. They are absolutely the best for cookies, I won't use anything else, and they have lasted for years and years.

    The irony of the negative reviewers on this site is that their baked goods are sticking only because they greased the sheet! Cookies should always be baked on an ungreased sheet. If a recipe calls for a greased sheet, such as with biscuits, always use shortening because such a thin layer of butter will burn, causing the biscuits to stick to the sheet.

  • customer review: It is true that your cookies won't burn, but what I don't like is that all the cookies I make on this sheet flatten out into thin little cookies. On my old cookie sheets they hold their form and any fillings in the middle do not leak out like they do when I use this cookie sheet. Also when I go to remove the cookies from the sheet they just smush up like they aren't cooked enough. Overall I will only use this for baking pizzas and cookies that should be flat.

Even with sticky or burnt on foods cleaning is a breeze. We love barbecue anything and when I am going to put barbecue on something I always grab this pan.   • customer review: As noted by other reviewers, these warp badly -- pretty much anything over 350 degrees, and even 350 is dicey. Not necessarily a problem if you are only using for cookies, but not useful for anything else!

    One alternative is Chicago Metallic professional-grade large jelly roll pans from Chef's Catalog (2 for $30); Costco also used to have a set of 3-4 professional-weight cookie/jelly roll pans even cheaper, so keep an eye out for those!

  • customer review: I purchased two of these because I liked the idea of stacking them for storage and travel. I received one in perfect condition and one with a cracked lid. I sent the damaged one back and Amazon sent me another one with a cracked lid. This happened two more times until Amazon confessed the next one will probably be cracked too, so they issued me a refund. From where the lids were cracked and the way they were packaged (in paper), I suspect they were damaged in transit. This transaction was annoying and time consuming. I finally found another one in a local retail store. It does not appear that the lids are easily cracked, so I don't believe I'll have trouble in the future with broken lids unless I drop it when attached to the pan. I paid $3 more than the current selling price of $12 which only added to my annoyance with only 5 days between when I ordered and when the price changed. At $12 these are a very good value, if you can get one in good condition.
    The WearEver Commerical Bakeware Cooling Racks that are 16.5 x 11.5 x.75" fit perfectly inside this pan. I like to bake bacon instead of fry it, so this combo works great. Also the Silpat 11-5/8-by-16-1/2-Inch Nonstick Silicone Baking Mat is the correct size so that the edges lay flat in this half sheet. With these two accessories, these pans become extremely versatile.The bottom of the pan fits beautifully into the inside of the lid for super compact storage.
