  • customer review: I have been impressed with Chicago Metallic's baking equipment, so when it came time to get a baguette pan this was right where I went. Their pans are nice and sturdy, and you will get years of use out of them.

    The perforated holes on the bottom make for a crispy crust and give a nice pattern and texture as well. I have never had a problem with the loaf sticking to the pan, or any other problems for that matter. I don't oil the surface as some have recommended, which has worked out just fine. I also love the fact that you can bake three baguettes simultaneously which saves time.

    A nice companion to the baguette pan is the French Bread Pan, which is similar in construction but larger for bigger loaves.

  • customer review: using these pans produces a loaf that is brown,crusty all around, with those little bumps you typically associate with commercial artisanal long loaves. i use floured canvas to shape the loaves and to place them on the bread pan. with 2 pans (4 loaves) you will be able to accommodate a typical recipe that starts with 3.5 cups of flour.

    these loaves are a little larger than the other pan offered, producing loaves up to 3.5" in diameter and up to 16" long. they fit in my smallish oven that, regrettably, cannot fit a standard half-sheet pan.

    using a pizza stone in the oven brings an even heat difficult to get any other way. i recommend the All-Clad Pizza Baker/Stone because it has a frame that prevents breakage and a stone that holds heat (also necessary for a really good focaccia at 550 degrees).

  • customer review: I've made bread many times in pans, on a stone, using a pan of water or ice cubes to create steam, but never have I had the glossy crisp crust and soft crumb that this pan creates. I recommend that your dough be a just a little bit on the wet side to achieve the best results. You don't even need a recipe: I just use (approximately) a pound of King Arthur European-style flour, a teaspoon or so of salt and a couple of teaspoons of yeast, with enough water to make a soft, slightly wet dough in the food processor. Let it rise one hour; punch down, shape and let rise in the pan for another hour, then bake for one hour at 400f. And yes, oil the pan and sprinkle some cornmeal on the bottom. (This actually makes too much dough, which I use to make a separate little round loaf, which is good, but the crust isn't the same.)

  • customer review: I make my own bread for my family and have used many bread pans but this one is the best. I only have one of the cast iron bread pans so when I make more than one loaf I still have to use my old pans. I have both aluminum -which is terrible and a stainless steel. The loaf in the cast iron has a much higher more even rise. I don't know the physics behind this but I am going to be getting another of these pans. It also has a really nice solid feel and is very easy to clean. Just slather it up with oil (I use extra virgin coconut oil - since it has so much saturated fat and doesn't easily go rancid it seasons the pan really well) before I put the bread in and it comes out clean with no mess. If you are looking to invest in a great bread pan that will last a long time, this is the one for you. I am seriously considering a cast iron muffin pan now since this one has been so great.

The interior finish does crackle with use, but it doesn't effect the quality of the release. Make sure you pre-soak the pan as indicated in the instuctions if you want a crisp crust.
